ALIGOT

    L'aligot is a traditional dish of Aubrac. It is said that already served the monks aligot the pilgrims to.  Compostelle. 

    Its origin is also in the existence of burons. In the summer pasture (from 25 may to 25 October), the  Buronnier guarded the herds on th plateau of Aubrac. Living in autarky, they levied on trafficking and manufacture of cheese (Cantal or Languiiole) stuff to improve their potatoes.

   Today, the aligot became the basis of festive menus. It is a feast in itself. It organizes aligot giant as organizes also a barbecue or grill.
